Salsa
Makes 5 to 6 pints of salsa.

Dice the tomatoes to make 16 cups (remove the stems). Sautee the tomatoes to thicken the sauce. Clean the jars. Place the jars in the oven at 250 degrees. Place the lids in medium heat water. Dice the onion, green onions, cilantro jalapenos, garlic and add to the sauce. Add the cumin, salt, lime juice to the sauce and boil for 20 minutes. Remove the jars from the oven and immediately add the salsa and secure with a lid and ring. Immediately add the jars to a water bath for 15 minutes. Let cool completely and remove the rings. |
