Potato Soup

Substitute sausage for the bacon if desired.

2lbPotatoes
32ozChicken broth
3tbspButter
1/4cupFlour
1tspSalt
1tspPepper
2cupMilk
1eaOnion
1/2lbBacon

Peel and cube the potatoes.

Cook the potatoes in the chicken broth until the potatoes are tender.

Cook up the bacon and then let cool so it can be chopped up.

In a separate pan, melt the butter.

Chop the onion and add it to the butter.

Add the flour, salt and pepper to the butter and heat until the mixture bubbles.

Add the milk and continue to heat until the mixture boils and starts to thicken.

Add the milk mixture and bacon to the potatoes and stir.
